This recipe was given to me by a friend years ago. It is always a hit at parties and gatherings but I am selfish and like to keep some for myself to eat or use as a delicious topping. A way to eat it as a topping would be to fill a corn tortilla with some grilled chicken, sharp cheddar and this salsa. Mmmm. It stays well in the fridge for about 5 days if it lasts that long and gets better every day. This isn’t THE healthiest recipe out there but there are worse options out there. Plus think of all of the healthy fats you are getting. And its delicious!
Chunky Olive Salsa
2-3 large tomatoes, chopped
3-4 green onions, chopped
1 small can chopped black olives
1 small can chopped green chiles
3 tbsp. olive oil
1 tsp. garlic salt
1 ½ tsp. white vinegar
¼ tsp. black pepper
Mix ingredients together and let sit in the fridge for a few hours before serving. Can also put all the ingredients in a food processor and blend slightly for a smoother salsa. Serve with tortilla chips or as a topping.
