This is a delicious and super easy recipe. I don’t know about you, but as soon as fall hits I want meat & potatoes. Must be the comfort food thing. This is a much healthier option if you use the lean turkey kielbasa. You can play around with the different proportions as well. This is what we ended up liking as a family. Meaning my husband and boys like lots of meat. Also play around with different vegetables or additions and let me know what you do!
Slow Cooker Sauerkraut & Kielbasa
1 medium onion, chopped
2-3 potatoes, diced
4 large carrots, peeled & chopped into 2-inch segments
2 14-oz packages lean turkey kielbasa
2 15-oz cans sauerkraut
1 cup chicken broth or more as needed
Layer the onion, potatoes, carrots and kielbasa in a slow cooker. Top with sauerkraut and spread around. Pour chicken broth over the top. Let cook on low for about 6-8 hours. Watch carefully. If the sauerkraut starts cooking too quickly, stir it around every so often. Enjoy!
